Ted Lasso: Biscuits with the Boss!

This shortbread cookie will not only cause any boss to curse in delight, it is super easy to make. It's buttery and slightly crumbly, and dipping it in chocolate really sends it over the top!


Biscuits with the Boss!


What you need:

  • 1 C unsalted butter, softened

  • ¼ tsp salt

  • ½ C powdered sugar, sifted

  • 2 C AP flour, sifted

  • 1 tsp vanilla

  • 6 oz dark chocolate wafers *optional*

  • 1 tsp orange extract *optional*


What you do:

  1. Using a stand mixer with paddle attachment, cream butter and sugar for 6-8 minutes, until a pale color. Add vanilla and mix to combine.

  2. Add salt to flour. Mix. Add flour gradually and mix just until combined. Do not overmix! Dough will look like sand.

  3. Using your hands, bring dough together to form a ball. Knead only if required to form smooth ball.

  4. Roughly shape dough into a rectangle shape, then transfer to 9x13 jelly roll pan. Press lightly into the pan.

  5. For a smoother surface, roll over dough with a roller or glass.

  6. Chill dough in refrigerator for 1 hour. This will solidify the butter again, creating a flaky biscuit!

  7. Score the dough into 8x3 rectangles to make cutting easier.

  8. Bake at 325 degrees for around 20 minutes. The biscuits should be a pale, golden color.

  9. Remove from oven and cut on score lines. Cool on rack.

  10. *Optional* - melt some dark chocolate with 1 tsp of orange extract in the microwave. Start with 30 seconds and go 10 second intervals until chocolate is melted. Dip half of biscuit in the chocolate and let excess drip in bowl. Put on rack to set.

  11. Serve!
