Our orange seed cake uses poppyseeds instead of the traditional caraway seeds. The addition of orange really takes the cake up a level. It is simple and delicious and will surely impress any LOTR superfan!
Bilbo's Orange Seed Cake
What you need:
1 C unsalted butter, room temperature
1 C granulated sugar, ¼ C to sprinkle in pan
Juice and zest of 1 medium orange- not more than ¼ C
3 eggs
1 ½ C cake flour
¾ C almond flour
2 tsp baking powder
1 tsp salt
1 tsp vanilla extract
What you do:
1. Sift cake flour, almond flour, baking powder, and salt together in a bowl.
2. Cream butter in a stand mixer until smooth. Add the sugar and mix until well combined. 2-3 minutes. Scrape bowl often.
3. Add the orange zest, juice, and vanilla. Mix to combine.
4. Add eggs one at a time, scrape bowl between each.
5. Add dry ingredients in 3 batches. Mix only until combined.
6. Spray a bundt pan with baking spray and sprinkle the sugar over the bottom of the pan.
7. Spoon the batter evenly in the prepared pan. Bake on 350 degrees for 40-45 minutes. Cake will be golden brown and baked through.
