Choke on my rage- Retsuko, metal karaoke
This Japanese- style double fried chicken and easy furikake fries won't cause you to rage, but it will be delicious! Serve this at your next karaoke night!
Karaoke Bar Chicken & Fries
What you need:
for the marinade
2 TB Soy sauce
2 TB sake
2 TB minced garlic
2 TB minced ginger
2 TB kewpie mayonnaise
2 TB Sesame Oil
for the chicken
4 Boneless, Skinless Chicken thighs, diced in 2-3 inch pieces
4-5 Cups Vegetable Oil
2 Cups All Purpose flour
½ Cup Cornstarch
2 Eggs, beaten
1 Tsp Salt
1 Tsp Pepper
for the furikake fries
Bag of frozen fries
2 Nori sheets, ground in food processor
2 TB Garlic granules
1 TB red pepper flakes
4 TB tuxedo sesame seeds
2-3 TB olive oil
for the sticky sauce
2 TB honey
1 TB fish sauce
1 TB hoisin sauce
What you do:
for the chicken
Marinate the chicken. Place chicken in a large Ziploc bag. Add soy sauce, garlic, ginger, sake, mayo and sesame oil. Marinate in refrigerator for 1- ½ hours.
Dredge the chicken. Line up two dishes- the first with the beaten eggs and the second with the flour, cornstarch, salt and pepper. Dip each piece of chicken in the flour, then egg, and back in the flour. Shake off excess.
1st Fry- Heat up the vegetable oil in a dutch oven, or large pot/pan. Heat to around 350F. Gently place 4-5 pieces of chicken in pot. Fry for about 3-4 minutes, until chicken is golden brown. Remove and continue to fry the chicken in batches until they have all been fried. Place chicken on wire rack with paper towels below. Turn off heat and let the chicken rest for about 10 minutes.
2nd Fry- Heat the oil back up to 375 degrees. Working in batches again, flash fry the chicken for 2 minutes, or until the batter turns a deep golden brown. Remove and place back on rack to cool.
for the fries
Mix seasoning mix together in bowl.
Lay fries on baking sheet, in one layer.
Drizzle olive oil over fries.
Sprinkle seasoning mix over fries. Mix to make sure every fry gets coated.
Cook fries according to the directions on bag.
Mix sauce ingredients together. Use as a dipping sauce.
