Sideritis Tea and Honey Salted Butter Cookies
What you need:
100 g salted butter (Just shy of 1 stick)
60 g turbinado sugar (raw cane sugar)
30 g honey
1 TB sideritis tea flower, crushed into a fine powder
1 egg yolk
160 g all-purpose flour
1 tsp baking powder
What to do:
Using the paddle attachment on a stand mixer, beat butter for 2 minutes on medium speed.
Add egg yolk and beat for another minute. Scrape down sides and bottom of bowl.
Mix baking powder and flour until combined. Add to stand mixer bowl and beat just until dough starts to form a ball.
Transfer to an airtight box and put in refrigerator to rest for 1 hr.
Cut 2 sheets of parchment paper. Dust one sheet with powdered sugar. Remove dough from refrigerator and put in middle of sugared paper. Dust dough with powdered sugar and top with second sheet of paper.
Roll out dough through the parchment paper. It is a dense dough so making any type of shape will be difficult. Roll to 1/2 inch thick.
Use any cookie cutter desired. Cut dough and place shapes on a parchment lined baking sheet. Chill in freezer for 20 minutes.
Bake at 350 degrees for 10 minutes. Cool on pan for 3-4 minutes and transfer to a wire rack to cool completely.
