Critical Role New Year's Brunch: Zhudanna's Quiche

with caramelized leeks, mushroom, and goat cheese

Quiche is quintessential brunch food. There are a lot of steps, but it is super easy to make! So, if you also find yourself with a basket full of effing food, this quiche will be a hit at any brunch.



Zhudana's Quiche


What you need:

for the crust-

  • 1 1/4 C all-purpose flour, plus some to work the dough

  • 1 stick unsalted butter, cold, cut into small pieces

  • 1 tsp salt

  • 1/4 C ice water

for the quiche-

  • 3-4 leeks, white and light green parts only, halved lengthwise, washed, sliced 1/4" pieces

  • 8 oz cremini mushrooms, cleaned and roughly chopped

  • 4 eggs

  • 2 TB butter

  • 4 oz goat cheese- we used herbed goat cheese

  • 3/4 C heavy cream

  • 1/4 C milk

  • 2 tsp thyme

  • 1 1/2 tsp salt

  • 2 tsp pepper

What you do:


  1. In a food processor, pulse the flour and salt until combined.

  2. Add the butter and pulse for 10-15 seconds until it forms a mealy consistency.

  3. While the processor is running, slowly add the ice water until the dough starts to form a ball.

  4. Shape dough into a disc. Wrap in plastic wrap and chill for 1 hour to overnight.

  5. Lightly flour work surface and roll out the dough to a circle slightly larger than your pan.

  6. Carefully place dough in pan. Press into the edges. Trim the extra dough and prick the bottom with a fork.

  7. Chill crust for 30 minutes.

  8. Cover crust in parchment paper, letting some hang over the edges. Add beans or pie beans and bake in oven @ 350 degrees for 25-30 minutes.

  9. Remove beans and paper and bake for another 12 minutes.

  10. Cool.

  11. Heat olive oil in large pan. Add leeks. Cook for 10 minutes.

  12. Add thyme and butter. Cook until butter is melted.

  13. Add mushrooms. Cook for 8-9 minutes, until everything is soft. Sit aside to cool a bit.

  14. In a bowl, mix eggs, milk, heavy cream, salt and pepper.

  15. Add leek and mushrooms to the crust.

  16. crumble goat cheese on top of vegetable mixture.

  17. Pour egg mixture to fill the crust.

  18. Bake quiche @375 degrees for 35-40 minutes, until the center should be just barely jiggly.

  19. Serve warm or room temperature.
