Critical Role New Year's Brunch: Critical Pastries - Pocket Bacon

It's not really practical to run around with bacon in your pockets. Plus, it's a little gross. So, why not have the next best thing, bacon in a buttery, flaky crust! Go ahead, impress your geeky friends with this beloved Critical Role treasure.

Pocket Bacon


What you need:

  • 6 puff pastry squares, cut in half

  • 12 asparagus spears tips

  • 6 bacon slices, cut in half

  • 4 oz shredded colby jack cheese

  • 1 egg, beaten

What you do:

  1. Wrap each asparagus tip in a half slice of bacon, leaving tops out.

  2. Put pinch of cheese in middle of the pastry square.

  3. Place 2 bacon wrapped asparagus tips on top of cheese.

  4. Top with remaining puff pastry, leaving the asparagus tip hanging out top.

  5. Using tines of fork, seal the 3 sides of the pastry. To make it more pocket-like, take a knife and cut the pastry to have a loose triangle shape on the bottom. Add designs by barely cutting the pastry.

  6. Bake @ 4oo degrees for 20-25 minutes, or until golden brown.

  7. Let slightly cool before serving.
