The Witcher: Boeuf Bourguignon

To spawn boeuf bourguignon in Witcher 3, type additem('Boeuf bourguignon') into the debug console.

While boef bourguignon can be commonly found in inns throughout Toussaint, here it is considered for special occasions. This boujee comfort food will be a hit on your holiday table!


Boef Bourguignon


What you need:

  • 3 lbs braising steak- Chuck Roast (or brisket)

  • 2 1/2 tsp salt

  • 1 1/2 tsp pepper

  • 2 TB minced garlic

  • 1 750 ml bottle Burgundy wine- Pinot Noir

  • 1 C beef broth (enough to barely cover the beef)

  • 2 bay leaves

  • 2 tsp thyme

  • 1 TB olive oil

  • 1 1/2 C carrots- sliced diagonally

  • 1 C medium onion, chopped

  • 2 TB flour

  • 2 TB tomato paste

  • 6 oz bacon (or pancetta), chopped

for topping:

  • 2 TB butter

  • 4 oz pearl onions ( 1/2 bag frozen, 1 jar, 12 fresh)

  • 8 oz mushrooms- cremini, sliced (any mushrooms will work)

  • 1/2 C fresh flat leaf parsley, chopped

What you do:

  1. Cut beef into 2 inch cubes. Season with 2 tsp salt and 1 tsp pepper. Massage into beef with hands. Let sit out for 30 minutes.

  2. Cook bacon in Dutch oven or large pot. Remove with slotted spoon.

  3. Add beef to pan and sear on all sides. This might have to be done in batches. Do not crowd the pan. Remove from pan.

  4. Turn down heat and sauté carrots and onions for 5-6 minutes, until softened. Season with remaining salt and pepper. Stir in garlic and tomato paste. Cook for 1-2 minutes.

  5. Add flour. Cook down for 2-3 minutes. Add wine, broth, and herbs. Cook for another 1-2 minutes.

  6. Add beef with juices back to pan.

  7. Bring to a boil and reduce to simmer. Cover and cook for 2 1/2 - 3 hours.

for topping:

  1. Melt butter in pan. Add mushrooms and pearl onions. Cook for 4-5 minutes, until softened.

  2. Add parsley and bacon.

  3. Top boef bourguignon with mushroom mixture.

  4. Enjoy!
